Cedar Jelly is made from the leaves of the eastern white cedar. It's very versatile and has a hearty flavour, but it will not retain its taste if it's overcooked. Aboriginal peoples use cedar needles as a tea. Chefs use our jelly as a glaze on salmon and other fish, as it gives the fish the taste of being roasted on a cedar board. It can also be mixed with the juices of the fish after cooking or added to a white sauce. It is also used in sauces for meats such as lamb and game. Cedar jelly can be used as a replacement in most recipes that call for mint jelly. Others recommend it on toast, and it taste wonderful with a bagel and cream cheese. The forest in a jar

I love cedar tea so was looking forward to trying cedar in jelly form. It is not overly sweet, but tastes exactly like the smell of freshly cut cedar. It pairs so well with cheese. I also tried a spoonful melted into hot Labrador tea, and it was delightful. This may become a staple in my pantry.

Refreshing and Sophisticated Flavor!

The flavor of cedar in the jelly is not overpowering but it is singularly evident. It really is perfect with cream cheese on a bagel. I was surprised to find that it was so delicious. It will be fun to experiment with glazing fish and meats with it. There is just the right amount of cedar in the jelly and the flavor is soft and balanced. The sweetness is light. Quite a foresty tasting treat. Very good product!

Intoxicating aroma

Immediately upon opening the cedar jelly, the sharp, crisp texture of cedar hits your nose. Smells and tastes are strongly reminiscent of a Northwoods portage in summertime. Delightful!
