Anise Hyssop - Anis Hysope - Agastache foeniculum
Anise Hyssop is a member of the mint family, it has a lovely anise/ licorice mint flavour that works well in teas, infusions, cocktail syrup, vinaigrettes, jellies or distillates. The flavour pairs easily with fresh fruits such as mellon or strawberries as well as other foods that work well with licorice/fennel such as soft cheeses, lamb or seafood. Anise Hyssop can be used in place of fennel seeds lending a slightly sweeter minty taste.
Pick Anise Hyssop when the flowers are finishing their full bloom for the strongest flavour, from june through to september, the licorice like oils are strongest when the plant is fully mature.
