Oilio of conifer (mugolio)
Olio of conifer or pine-cone syrup is made by infusing immature Scots pine cones in organic cane sugar and brown sugar then leaving them to macerate and slightly ferment. The result is a surprisingly rich and aromatic syrup that has a deep piney, almost citrus flavour. Use it drizzled on pancakes or over ice cream or muesli and yogourt. Its flavour pairs beautifully with cooked pears and soft cheeses. It can be also used in cocktails, especially gin-based drinks, in baking, and as a glaze for ham.
