Common in jack pine forests, turtle mushrooms get their name as their caps can resemble the shell of a turtle hidden amongst the lichens on the forest floor. When picked young and still pale in colour, prior to the mushroom developing a brown flesh, and dried, turtle mushrooms develop a lovely woodsy and full robust flavour.
