Red Caps Boletus
Red Cap (Orange boletes - Leccinum versipelle) mushrooms are related to the porcini/ceps and have a similar full flavour. Their aroma is faintly reminiscent of an earthy, fresh toast. They are often cooked in stews and in the juices of roasting meats such as lamb shanks.
Consumption of the leccinum genus has been implicated in causing issue with food intolerance, specifically fresh undercooked leccinums in and around the rocky mountains. All of our leccinums are sourced from Ontario and Quebec and will not cause the same issues as similar varieties of the same mushroom elsewhere. However like many wild foods, individual tolerance to the mushroom may differ and without proper cooking leccinums may cause minor sickness.
