Elderberry Jelly
Elderberry Jelly (sambucus nigra) is made from the juice of the blue-black berries of the wild elderberry plants that grow in near-marshy ground in many areas of Eastern Canada. Elderberry jelly has been a favourite for a long time. It has a distinctive taste and is used as a condiment for meats as well as a flavouring in gravies and sauces. For a big flavour hit, use it on freshly baked bread or toast.
