Maple Syrup is the gift we originally received from the Ojibway and Six Nations peoples. Produced from the sap of the sugar maple, pure maple syrup is ideal for cooking because of its deep, rich flavour. Although excellent on pancakes, this syrup gives the flavour profiles you want in maple-walnut pie or other dishes that require flavourful sweetening. Our maple syrup comes from a single forest outside Goderich Ontario, this ancient sugar bush is carpeted in wild leeks and home to lots of wildlife. To avoid developing burnt or smokey flavours our syrup is first run through a reverse osmosis machine that cuts about 70% of the energy needed to boil syrup down, this produces a clean tasting syrup full of true maple flavour. It is then further reduced down in a low temperature simmer to 66brix.  Our Very Dark maple syrup was the 2015 Now Magazine top "Ecoholic" pick for Toronto’s best maple syrup, and while traditionally lighter syrups have been more popular, we sell about two times more dark syrup than anything else because of its amazing deep rich and pure flavour. We hope that you will enjoy. 

We have 3 different types of maple syrup:

Organic Amber is our lightest syrup, made when the sap has the highest sugar constancy. Traditionally light syrups have been the most sought after though they have the least amount of maple flavour.
Organic Dark is our mid range maple syrup, slightly more maple flavour and a darker colour than the No.1.


Very Dark is a rich deep flavoured buttery maple syrup with a clean taste, made when the sap has its lowest sugar content letting the flavours of the minerals in the sap shine though.

 

What makes our natural and organic syrup different from conventional maple syrup are the guidelines for quality that have to be adhered to when making our syrup. Defoamers made of animal fat are not used meaning our syrup is vegan friendly. Hoses, machinery, and boilers are all washed down in pure water taken from the sap. Formaldehyde plugs that can hamper microbial and fungal growth are not used and the trees are not injected with chemicals cocktails that force the trees to produce more sap. Our syrup is made the way you would want it made; clean and without tricks or additives.

 Maple syrup should be used within 3 years of purchasing, opened maple syrup can last for 1 year in the fridge. Improper storage or drinking directly from the bottle may decrease its shelf life.

Best maple syrup you'll ever have....PERIOD.

THIS IS THE BEST MAPLE SYRUP YOU'LL EVER HAVE!! I've been buying Forbes maple syrup for the last 8 years and there is truly no comparison. I recently had to purchase another brand because I wasn't able to get my usual supply and I noticed it was watery and tasteless...!! Forbes maple syrup has deep flavour, it's thick and I know it's coming from a great company. It's a-a-a-amazing for baking I use it in all of my muffins, cakes and cookies as a replacement for sugar. Just the best!

I've always enjoyed Forbes' syrups, but their very dark is the best I've found so far. It's almost red in color with full depth. I use it all around especially with baking and in coffee. Perfect for a full pancake breakfast. A must try!
