High-Bush Cranberry Jelly
The high-bush cranberry (Viburnum trilobum) is a rounded shrub four to eight feet tall that grow across most of Canada and produces clusters of bright red berries. They are not related to bog cranberries, which are commercially grown, but their berries look and taste like them when cooked. We don't advise eating them raw, as the seeds can make them taste funky. The jelly we offer is made from cold-extracted juice, which gets rid of the seeds' taste. It is excellent as a sauce or glaze for game birds, and alongside turkey. A spoonful added to a gravy will give it a slight fruity, unmistakably cranberry flavour.
