Cloudberry Compote
Cloudberries (Rubus chamaemorus) are a flavour-packed berry that grows wild across northcentral Canada. Also known as bakeapples, cloudberries are related to the raspberry but are bigger and taste like a cross between passion fruit and apricot. Our cloudberry compote is often eaten spread on toast or fresh bread, but it can also be served as an accompaniment to game meats. It is perfect for desserts, especially when paired with chocolate, and it's delicious as a pie filling made of 80 per cent apple, 20 per cent cloudberry compote.
