Cloudberry Compote is made from cloudberries picked across the middle north of Canada, often where few people live. It is related to the raspberry but is bigger and tastes like a cross between passion fruit and apricot. It is often eaten as a preserve on toast or fresh bread. In restaurants it is used as an accompaniment to game such as caribou. It is excellent in a pie made with 80 per cent apple, 20 per cent cloudberry. It is perfect for desserts, especially desserts with chocolate.
